Spring is here! We’ve been harvesting loads of squash and zucchini on the farm and always looking for fun ways to use them. We enjoy making fritters with zucchini and squash and this recipe has a great fluffy texture. I doubled the recipe which made 9 pancakes the two of us ate for dinner. I also substituted Magda squash for the zucchini and 3 jalapenos instead of the corn. I topped our pancakes with fresh diced Clementine Tomatoes and chives.
